Chocolate chunks – You’ve certainly never tasted chocolate this fresh before. Are you looking for a sweet, homemade gift idea for Christmas for friends, for a loved one’s birthday, or as an additional product to sell in your own farm shop? Our chocolate breaks course is perfect for this – after all, who doesn’t love fresh chocolate, especially when it’s homemade! Please note that in this course we won’t be tempering the chocolate / couverture ourselves. If you’d like to learn more about tempering chocolate/couverture, why not join ourcouverture tempering course?

Nowadays, ‘broken chocolate’ refers to freshly made chocolate that is broken or cut immediately after production. This broken chocolate is characterised by its exceptional freshness and the large quantity of different high-quality ingredients it contains. The characteristic broken edges, created by breaking or cutting the chocolate, offer a direct glimpse of what lies inside each piece.

Each person may pour four of their own chocolate bar moulds and cut the poured chocolate bars into 8 equally sized pieces each. This means that by the end of the course, each person will have made a total of 32 individual chocolate bars.

Our course leader, an experienced chocolatier, will show you step by step how to make these chocolate bars. Each person may choose five different recipes from a wide range of options.

There is a wide variety of ingredients to choose from, such as: various freeze-dried fruits, caramelised hazelnuts, cocoa nibs, various nuts, ginger, various spices, Hüppen flakes, dried fruit, cornflakes, and various granules such as: caramel, passion fruit, blood orange, Walsbeer granules or even popping candy.

As each person makes four different varieties of chocolate pieces, the chocolate pieces they have made and chopped up can be kept for themselves or swapped with other participants in the group. Everyone is free to decide this for themselves, entirely as they wish.

Each participant makes approximately 1 kg of assorted chocolate pieces. The individual bars look particularly attractive when packed in a transparent ‘bag’ and stacked on top of one another in different varieties. It is up to each individual to decide how many bars to stack on top of one another in the bag. A single bar weighs approximately 25–30 g. At the end of the chocolate bar-making course, the filled chocolate bags are tied with a pretty bow before being packed into a carrier bag to take home. All participants receive a recipe booklet containing the relevant broken chocolate recipes so they can make them at home with their loved ones. It’s also a brilliant idea for homemade gifts – you’re guaranteed to score points with this gift idea.

This course is suitable for anyone aged 10 and over who loves chocolate more than anything and would like to spend a few carefree hours with us. You’ll learn the basics of making chocolate bars, but not how to temper chocolate. If you’d like to learn how to temper chocolate, why not join our couverture tempering course, as our chocolate bar-making course doesn’t cover this aspect.
