How does freeze-drying work for fruits in the first place?

This is a very gentle process that preserves the fruit. When buying freeze-dried fruit, you hardly have to make any compromises in terms of color, shape or nutritional value. On the contrary, the taste is in many cases even more intense. The reason for this is the fact that these fruits contain hardly any water. Similar to drying, freeze-drying thus removes the water from fruits. The drying itself is carried out by a process in which the fruits are placed in a vacuum chamber under negative pressure.

What fruits are suitable for this process?

There are hardly any restrictions for this; almost all fruits can be freeze-dried. Whether they are berries, citrus fruits (e.g. mangos, bananas, kiwis) or stone fruits (e.g. cherries), the fruits will keep for a long time and will not change their texture.

Advantages of freeze-dried fruits

The main advantage is the better taste than fresh fruit in winter and, of course, the very long shelf life. There are also no additives added to the product in this process. This means that you can enjoy freeze-dried fruits that consist of 100% natural ingredients. Another advantage is the wide range of applications for freeze-dried fruits. In stores, they are available in their original texture, but also as a powder. In everyday stress it is difficult to take a sufficient amount of vitamins, but with the powder you can make delicious and especially healthy shakes in a very short time.
