3D chocolate moulds give you pralines that are rounded on every side: a whole sphere, an egg, a heart, an apple, a pear or a strawberry. Each of the six moulds makes 28 pralines. Flat heart designs are in our heart chocolate moulds, and every other design is under praline moulds.
Which 3D moulds do we stock?
- Hollow sphere mould, 28 pralines per mould: the starting point for round truffles, which you can then roll in cocoa, nuts or couverture.
- 3D egg mould, 28 pralines: small filled eggs for an Easter nest or as table decoration.
- 3D heart mould, 28 pralines: a fully domed heart for Valentine's Day.
- Fruit: apple, pears and strawberries, 28 pralines each: they look most convincing once you add colour.
Working with 3D moulds
A 3D praline is made from two halves. As with any mould, it needs to be clean, dry and polished, or the shell will not shine. For the fruit, paint the cavities first with coloured cocoa butter: red for strawberries, green or yellow for apples and pears. Let the colour set before the couverture goes in. Then cast thin shells with tempered couverture, fill the halves to just below the rim and join them: melt the edges briefly on a slightly warm tray, press the halves together, chill and knock them out. Every step is shown in our recipe make your own 3D praline Easter eggs.
If you would rather not cast your own shells for truffles, ready-made hollow balls for truffles are the quicker option.
