The right cake tray decides whether a recipe turns out the way it should. At miniSchoggi you will find cake trays in seven round sizes from Ø 20 to Ø 32 cm, plus a rectangular one measuring 43 x 32 cm.
The round trays come in Ø 20, 22, 24, 26, 28, 30 and 32 cm. Ø 24, 26 and 28 cm are the sizes most classic recipes are written for. Ø 20 and 22 cm suit small cakes, while Ø 30 and 32 cm are for large rounds that need to serve many. The rectangular 43 x 32 cm tray is for traybakes, slices and flat bases.
Use the size named in the recipe. If yours is different, scale the recipe: the area grows with the square of the diameter. Going from Ø 24 to Ø 28 cm needs roughly a third more batter, and the baking time changes too. We explain how in our recipe How do I convert a cake recipe?
Tip from the bakery: never fill the tray to the brim. Leave room for the batter to rise, otherwise it spills over or the base bakes unevenly.
The simplest answer is the Ø 24 cm tray. If you only have Ø 26 cm, the base will be thinner and bake a little faster.
Cake rings are handy here, because you can build the base and cream layers right inside the ring. For serving and transport, take a look at our cake boards.
For cutting and lifting you will also want a spatula and cake cutter. All other helpers are in cake tools, and for a fruit tart with a crisp base see our recipe for a tart base with vanilla cream.
