Brittle, granules and flakes at a glance

  • Nut brittle: roasted hazelnut brittle and roasted almond brittle, 200 g each. The classic for cake sides, custard slices and ice cream.
  • Knusper-Fix: a Florentine mix that makes it easy to bake Florentines or a Bienenstich (bee sting cake).
  • Fruit granules: lemon, raspberry, blackberry and tutti frutti, 350 g each.
  • Coffee granules: mocha and cappuccino, 350 g each.
  • Chocolate granules: metallic red and bronze, 350 g each.
  • Crunchy marzipan flakes: gold, red and bronze, 350 g each.

How to use them

  • Around the cake: spread a thin layer of buttercream or whipped cream around the side, take a handful of brittle in your flat palm and press it gently all the way round.
  • In fillings: fold brittle or Knusper-Fix into buttercream, ganache or mousse just before filling, so it stays crunchy.
  • In cakes and biscuits: a few spoonfuls of almond or hazelnut brittle in the batter add nutty flavour and little pockets of crunch.
  • On chocolate: scatter granules or marzipan flakes over freshly dipped chocolates or chocolate bark while the couverture chocolate is still soft; that is the only way they will stick.

Combining colours and flavours

Raspberry and blackberry granules suit berry cakes, lemon granules a lemon drizzle loaf, mocha and cappuccino a coffee buttercream. For celebration cakes, gold or bronze marzipan flakes and the metallic red chocolate granules add a festive touch. More ready-made decorations are in chocolate decorations.

Frequently asked questions

What is the difference between brittle and granules?

Brittle is made from caramelised sugar and roasted nuts and tastes nutty. Granules are small sprinkling grains that, depending on the type, bring colour and flavour such as lemon, raspberry or mocha.

How do I keep brittle crunchy?

Store it airtight and dry. Moisture softens it, so on cakes it is best sprinkled on just before serving.

Where can I find whole nuts and nougat?

In nuts & nougat. Matching glazes are in cake glazes & icings, and all other baking ingredients in fillings & ingredients.
