Baking molds are available in many shapes and designs, so that uncertainty quickly arises as to which is the right baking mold for the baking work. In this article, the miniSchoggi team explains the advantages and disadvantages of metal baking pans.

What are the types of metal baking pans?

Most metal baking pans are made of black or tinplate. High heat conduction properties make these molds a favorite of many amateur and professional bakers. However, there are also differences between the types of sheet metal that can affect the baked product.

Advantages and disadvantages of black plate Baking molds made of black plate are heavier than molds made of silicone or tinplate. Thanks to a light non-stick coating, comparable to that of a baking tray, cakes, pastries and other baked goods can be easily removed from the mold. Tinplate absorbs heat quickly and transfers it evenly to the baked goods. This is a factor to consider, especially for small baked goods, as baking time may be slightly reduced. Motif baking pans also benefit from the heat conductivity of black plate and brown evenly in the baking process.

Despite the non-stick coating, it is still recommended to grease the black plate pan before baking. Care should be taken when cleaning black plate: The metal is susceptible to scratches and is not dishwasher safe. Residues from baking should therefore first be carefully removed with wooden or plastic utensils and then with a soapy solution in hand wash.

Advantages and disadvantages of tinplate Unlike other metal baking molds, tinplate molds are very light. Especially large molds and trays are easy to handle, which is why tin plates are popular among hobby and professional bakers alike. However, one disadvantage of this metal baking pan is its sensitivity to acid. If you bake fruit cakes or similar acidic cakes in tinplate pans, they will discolor and tend to rust. Direct drying after washing is also recommended to prevent rust. Tinplate pans are not dishwasher safe.
