Tips from the bakery

For a drip that runs nicely you need a well-chilled, smoothly coated cake and an icing that is lukewarm and evenly liquid. Always test the flow on a spoon or on the edge of the cake first. For cake glaze on fruit, let it cool for a moment before applying, otherwise the fruit slides. Our article on the drip cake shows more.
