What are hollow praline shells and what are they used for?

Hollow praline shells are small chocolate shells or molds that are used to hold a filling for pralines. They are usually made of thin layers of chocolate, produced in special molds and have a hollow, round or oval shape.
The praline shells or hollows serve as the basis for the production of pralines. After the chocolate has been poured into the molds and hardened, they are filled with a filling, for example ganache, nougat, marzipan or fruit jelly. The hollow bodies are then sealed with more melted chocolate so that the filling is completely enclosed.
Praline shells are important for the production of pralines, as they protect the filling and create a pleasant textural and taste combination with the filling. In addition, the shells allow the pralines to be designed in a variety of ways in terms of shape, size and aesthetic details.

What is the advantage of pre-molded hollow praline bodies or praline shells?

The advantage of pre-molded hollow praline balls or shells is that they already have the desired shape and size. This saves time and work when making chocolates, as you no longer have to shape or mold the hollow body yourself. In addition, prefabricated hollow bodies are often very even and cleanly shaped, which leads to an aesthetically pleasing end result.
Otherwise, pre-cast hollow bodies also make it easier to fill the chocolates. The desired filling can be poured directly into the hollow body without having to worry about the shape or stability. This simplifies the manufacturing process and ensures greater efficiency.
Pre-cast praline shells or hollow bodies also offer a greater variety of shapes and designs. You can choose between different sizes, shapes, textures and colors to meet individual needs and preferences. This allows chocolates to be designed more creatively and presented in a more appealing way.
All in all, prefabricated hollow praline molds or shells save time, make filling easier and offer greater design freedom in the production of chocolates.

7. Place the molds in the refrigerator to allow the chocolate to set. This can take around 30 minutes to 1 hour. Then seal the top of the praline molds with tempered couverture or chocolate. Or coat your pralines using a praline fork.
8. Once the pralines are firm, you can remove them from the molds.
Your delicious pralines are now ready from the praline shells.

What is the difference between Truffe's hollow balls and praline shells?

Truffles hollow balls and praline shells are both containers used in the production of chocolate pralines. The main difference between the two lies in their shape and use.
Truffles Hollow balls are small, hollow balls of chocolate. They are usually round and have a flat opening to insert the praline filling. Truffles hollow balls are used to make truffle pralines, where a creamy filling is placed inside the chocolate ball and then sealed. Truffles hollow balls are usually slightly larger than praline shells and have a thinner chocolate layer.
Praline shells, on the other hand, are flat, shell-shaped hollow bodies made of chocolate. They have a smooth surface and are used to make pralines with solid or semi-solid fillings. The praline shells usually have a deeper curvature than truffles hollow spheres to provide more space for the filling. The filling is placed in the praline shell and sealed with a thin layer of chocolate or other coating.
To summarize, Truffe's hollow balls are used to make truffle pralines with a creamy filling, while praline shells are used for pralines with a solid or semi-solid filling. Truffe's hollow balls have a thinner chocolate layer and are slightly larger than praline shells.

What is the difference between dark and dark chocolate?

Dark chocolate and bittersweet chocolate are two different terms for the same type of chocolate. The term "dark chocolate" is generally used in the USA, while "dark chocolate" is more common in Europe. Both terms refer to chocolate that has a higher cocoa content than milk chocolate.
The exact difference in cocoa content varies by manufacturer and country. In general, dark or bittersweet chocolate has a cocoa content of 50% to 90% or even more. This gives it a more intense, bitter taste compared to sweeter milk chocolate.
Dark chocolate and bittersweet chocolate also contain less sugar and often no milk components. Due to the higher cocoa content, they tend to have a higher nutritional value and a higher proportion of healthy flavanols, which have antioxidant properties and can have a positive effect on health.
However, there is no clear and uniform definition or standardization for the term "dark chocolate" or "dark chocolate", so the taste can vary depending on the brand and cocoa content.
