The couverture acts as a layer that completely or partially covers and encloses the pastry. It ensures that the cake does not dry out so quickly and also serves as a base for a variety of decorations, which come out much better on a smooth, even surface.... Many cake decorations made of sugar or marzipan find perfect hold in the couverture, which are fixed after drying in the couverture layer.

Couverture: Delicious variety for your beautiful cakes and tarts There is a suitable couverture for almost every pastry. When choosing, you should consider the taste, appearance and quality of the products on offer. Couvertures come in different varieties, and the taste depends largely on the proportion of cocoa beans used in them. Light-colored varieties contain hardly any cocoa, while those with a high cocoa bean content tend to be darker and have a bitter note. Some varieties are stronger in flavor e.g. geisse contain a nutty flavor or fruity notes. Since the couverture mass must be tempered before use, it is often offered in packages with small round or square pieces. This makes it easier to portion for its intended purpose and convenient to temper. Common package sizes include 0.5 or 2 kg. If you bake often and like to bake, you should always have a supply of different varieties in the house.

Use and storage
