On our Christmas cookie baking course in Adliswil you bake classics of Swiss Christmas baking in our own bakery, such as cinnamon stars, vanilla crescents and Spitzbuben jam biscuits. You learn the little tricks that make your Guetzli (Swiss Christmas biscuits) even, tender and beautiful. You will find the current dates in the course list above.

What can you expect?

Everything revolves around Christmas biscuits: handling doughs correctly, rolling them out evenly, cutting them out cleanly, filling, glazing and decorating. You find out what matters for cinnamon stars with their egg-white icing, how vanilla crescents stay short and crumbly and how to fill Spitzbuben neatly. You also pick up professional techniques that no recipe mentions. Because Christmas biscuits call for very different doughs – from shortcrust to the almond and egg-white mixture of cinnamon stars – you learn several basic techniques that you can then apply to your own family recipes.

Who is the course for?

The course suits anyone who wants to bake their own Christmas biscuits, as well as experienced bakers who want to refine their technique. A course place also makes a lovely gift. Public courses take place in our course rooms on Webereistrasse in Adliswil, about 20 minutes from Zurich main station. The Christmas biscuit course takes place in Adliswil only; company and team events elsewhere in Switzerland are available for chocolate and praline courses only.

Tips for baking at home

Let shortcrust dough rest in the fridge for a few hours, ideally overnight, before rolling it out – it cuts more cleanly and keeps its shape in the oven. Bake one tray at a time rather than several at once, so all the biscuits colour evenly. Only add icing or chocolate once the biscuits have cooled completely, otherwise the surface turns blotchy. You will find suitable cutters under Christmas cookie cutters, and to keep your biscuits fresh until New Year, an airtight Christmas biscuit tin is well worth it.
