With a roulade mat, the sponge for Swiss rolls and decorated roulades comes out evenly: the mat gives the shape, prevents sticking and makes rolling easier. Here you will find 16 items, from silicone mats with a rim to decorative mats with a pattern.

Which roulade mats do we have?

  • Silicone roulade mats with a rim in 32.5 x 32.5 x 1 cm, 42 x 35 x 0.8 cm, 54.5 x 35 x 0.8 cm and 56 x 36 x 2 cm. The rim keeps the sponge batter on the mat.
  • Decorative roulade mats with patterns: hearts, elegant, flowers, dots, fir tree and stars. They come small (30 x 20 cm) and large (60 x 40 cm).
  • Silicone heart stencil in 3 sizes.
  • Rolling pin sets in 3 sizes and 6 pieces, which also help with shaping.

How to work with a roulade mat

With the rimmed silicone mats, you spread the sponge evenly and bake it directly on the mat. The mat then makes it easy to lift and roll the roulade. The decorative mats carry a pattern that then appears on the outside of the rolled roulade. Our article make your own decorative Swiss roll guides you step by step.

Tips from the bakery

Choose the mat to match your tray. A 60 x 40 cm decorative mat needs a tray of the same size. Roll the roulade while it is still warm, so the sponge does not crack. Then let it cool before filling it. A proven recipe is our sponge basic recipe, in a chocolate version the chocolate sponge.

Frequently asked questions

Roulade mat or baking paper?

Baking paper does the job for a simple roulade. The mat adds a rim, shape and, with the decorative mats, a pattern. More general work surfaces are under Baking mats & work surfaces.

Where can I learn roulades and sponge?

You will find suitable offers in the patisserie courses in Adliswil and the cake courses. For rolling out dough we recommend Rolling pins & straight rolling pins; the overview is at Cake tools.
