1. Very carefully separate the eggs and beat the egg whites in a clean bowl until stiff. Set aside.
2. In another bowl, mix the egg yolks with the sugar and vanilla sugar. Beat the mixture until foamy.
3. Add the mascarpone and mix well.
4. Now carefully fold the beaten egg white into the mascarpone mixture.
5. Pour the cold espresso into a shallow bowl and add the amaretto. Mix both ingredients well.
6. Dip the ladyfingers into the prepared and slightly cooled espresso-amaretto mixture. Line them in a baking dish or place them in serving glasses.
7. Spread half of the mascarpone cream evenly over the ladyfingers.
8. Repeat the process with a second layer of ladyfingers, espresso mixture, and mascarpone cream.
9.Finally, sprinkle the tiramisu generously with cocoa powder.
10. Leave the tiramisu in the refrigerator for about 3 hours or even better overnight.

Quick and easy chocolate mousse recipe

Ingredients:
- 200 g dark chocolate
- 4 eggs
- 2 tablespoons sugar
- 200 ml cream
Preparation:
1. First, roughly chop the chocolate and melt it over a water bath. Make sure that the water bath is not too hot to avoid burning the chocolate.
2. Meanwhile, separate the eggs and beat the egg whites until stiff.
3. In a separate bowl, whisk the egg yolks with the sugar until foamy.
4. Add the melted chocolate to the egg yolk-sugar mixture and mix well.
5.Then carefully fold in the beaten egg whites so that they do not collapse.
6. Finally, whip the cream until stiff and fold it into the chocolate mixture as well.
7. Pour the chocolate mousse into glasses or bowls and chill in the refrigerator for at least 2 hours to set.

- 500 ml cream
- 100 g sugar
- 1 vanilla bean
- 2 sheets of gelatine

Step 2: Soak the gelatin sheets in cold water until soft.
