St Nicholas Course

A chocolate St Nicholas figure is simply a must-have to build up the anticipation for Christmas, and especially for St Nicholas Day. Would you like to combine this year’s festive season with a truly special experience? In our St Nicholas course, you’ll learn from real chocolatiers how to mould your own chocolate Christmas figure.

This course is suitable for adults and children aged 8 and over. Each participant will create their own chocolate Christmas figure (St Nicholas, a reindeer, a snowman or a St Nicholas boot) and will also make 14 truffles with various fillings.

Please note that participation is restricted to registered participants only. Accompanying adults are not permitted on this course.

St Nicholas Course – Programme

Our experienced course leaders will show you how to prepare and polish a professional chocolate mould so that the chocolate takes on its distinctive sheen. Next, in our St Nicholas course, you’ll learn how to decorate the mould with different types of chocolate.

You can choose from white, dark, milk and even red-coloured chocolate, so there’s something to suit every taste. Once you’ve decorated your own chocolate figure, the best part comes next – filling the mould with your favourite chocolate.

Whilst your chocolate figure is left to cool in the fridge, our course instructor will show you how to fill 14 truffles (pralines) with different fillings and how to coat them later in liquid chocolate, before finishing them off with a variety of sprinkles. 

Later, the finished chocolate figure is carefully removed from the mould and beautifully wrapped. Anyone who has chosen a boot-shaped chocolate mould can now fill it, for example, with the truffles they’ve made themselves. This course is fun for young and old alike and makes for a great family experience during the festive season. 

Due to time constraints, we will not be covering the proper tempering of couverture chocolate. If you’re interested in tempering couverture, we recommend you attend our couverture tempering course.

The course is suitable for adults and children aged 8 and over. A maximum of 14 people may take part in each course. Please note that only those who have registered may take part. Accompanying adults are not permitted on this course.

A homemade chocolate Christmas figure (St Nicholas, a reindeer, a snowman or a St Nicholas boot); you’ll also make 14 truffles during the course, which will be filled with a variety of fillings.
