Felchlin – Swiss Chocolate Tradition Since 1908

Felchlin processes carefully selected cocoa varieties from around the world, maintains direct partnerships with cocoa farmers and controls the entire production chain from the Cocoa bean to the finished couverture. The result is a chocolate with a unique, multi-layered flavour profile that is unrivalled in the world of patisserie and confectionery.
Tempering Dark Couverture 52% correctly: the seeding method
For the Felchlin couverture to develop its full shine, the perfect snap and a velvety texture, it must be tempered. During tempering, the couverture passes through three stages: melting, cooling and reheating. The simplest method is the seeding method: 2/3 of the couverture is melted and then seeded with 1/3 couverture drops. The following temperatures apply for dark couverture:
Stage 1 (Melting): 45 °C. Slowly melt the couverture to 45 °C, stirring well throughout. A tempering device or a bain-marie works best. Important: water must on no account get into the couverture, otherwise it will become crumbly and lumpy.
Stage 2 (Cooling): 28–29 °C. Seed the melted couverture with 1/3 couverture drops and stir until the mass has cooled to 28–29 °C. The drops bind the cocoa butter crystals and ensure the correct crystal structure.
Stage 3 (Reheating): 32–33 °C. Gently warm the couverture to 32–33 °C. A Chocolate thermometer and a heat gun for chocolate help to maintain the temperatures precisely. It is now ready to use. Correctly tempered couverture shines, breaks cleanly and releases effortlessly from the molds.
Preparing Chocolate molds and casting Pralines
Preparing the mold is crucial for the result. First wash the molds with lukewarm water and a gentle washing-up liquid free of Lye and rinse aid, as these would damage the molds. Rinse off all residues thoroughly and dry the mold very carefully. From this point on, do not touch the mold with your hands, as fingerprints will later be visible on the chocolate. Polish the cavities with a lint-free piece of cotton wool or a very fine tissue so that the chocolate will have a perfect shine later. Now brush each cavity of the mold with a clean, dry brush and a little tempered couverture and turn the mold over: once no more air bubbles are visible, the mold is ready to fill. Then fill the cavities with tempered couverture right to the rim, using a Piping bag, a ladle or directly from the pot. Tap gently on the edge of the mold with a Spatula so that air bubbles rise and disappear. Turn the mold over and tap off the excess couverture onto a sheet of baking paper until the praline shells are the right thickness. Scrape the surface of the mold clean with a metal horn. Place the mold in the fridge for 10 minutes to allow the couverture to set. Return the excess couverture from the baking paper to the Bowl.
Filling and sealing Pralines
Now comes the filling: a fine orange Ganache is particularly well suited to the Felchlin Dark Couverture 52%. Let the filling cool slightly and fill the praline cavities to 3 mm below the rim. Leave to stand for half an hour at room temperature so that a light skin forms. Then seal the Pralines with the remaining tempered couverture, scrape the surface with the metal horn and place the mold back in the fridge for another 20 minutes. To unmold, twist the mold slightly and quickly flip it onto a clean work surface. If not all the Pralines come out immediately, tap the mold gently on the table. If they still won't come out, put the mold back in the fridge for a little longer. With a bit of practice you'll create beautiful, professional Pralines. For special effects, you can add a little coloured cocoa butter to the cavities before brushing.
Dark Couverture for Ganache, cake icing and Desserts
In addition to Pralines and Chocolate molds, the Felchlin Dark Couverture 52% is ideal for velvety Ganache as a cake filling, for smooth, glossy cake icings, for chocolate decorations and as an aromatic base for mousse au chocolat and other desserts. Its fluid consistency ensures a thin, even coating and a fine, elegant bite.
