Handling – here's how easy it is
The decorative Gingerbread men are ready to use straight away – simply open the pack and get started. Placing them is straightforward and works perfectly even without baking experience. On a moist surface such as Buttercream, Ganache, sugar glaze or icing, place the Gingerbread man using a Cooking tweezer or your fingers and press lightly – the moist surface ensures the figure adheres immediately and sits securely, without any additional aids. On a dry Fondant surface, apply a small dot of edible glue or a drop of melted chocolate to the underside of the figure, press down and wait briefly until the glue has set – then the Gingerbread man sits securely in place. One thing is particularly important when working with this Sugar decoration: sugar figures are sensitive to moisture. Do not store the decoration in the fridge – the moisture will soften the figures and the fine details will be lost. If the finished decorated baked good is refrigerated, place the figures on just before serving. Otherwise store in a cool, dry place away from light at 12–20°C – this keeps the Gingerbread men dimensionally stable and ready for use at any time.
