Hazelnut brittle roasted, 200 g
Pralines, cakes and other desserts such as éclairs or macarons with a delicious crunch are easily made with hazelnut brittle. The roasted and caramelized hazelnuts can be used both in the filling and as decoration. For example, add them to the chocolate and pour it into bar molds, creating a real crunchy chocolate.
Hazelnut brittle - application
For delicious and crunchy chocolates you need some hollow praline balls or shells, a piping bag, some hazelnut filling and couverture. Whip the hazelnut filling until fluffy, mix in the hazelnut brittle, place the mixture in the piping bag and cut off the tip. This way, the cream can be piped directly into the hollow spheres or shells. You can also mix the cream with a little chocolate ganache in advance, this will create a less intense, creamy hazelnut crunchy ganache. Finally, seal the chocolates with some tempered couverture and decorate or coat as desired with sprinkles, sprinkles or, of course, hazelnut brittle.
If you would like to add a fine crunch to your éclairs, macarons or a cake, add some hazelnut brittle to your cream. For Éclairs, for example, a simple vanilla or chocolate mousse is suitable; for macarons, buttercream or ganache is a good choice. For a delicious cake filling, you can also make a vanilla cream or, for example, a yogurt or quark mixture and mix it with the hazelnut brittle.
For an extra crunchy chocolate bar, mix your tempered couverture with the hazelnut brittle. This way you can pour it into a chocolate bar mold or onto baking paper. After a few minutes in the refrigerator, the chocolate can be unmolded and cut or broken into pieces as desired.
Hazelnut brittle is an exclusive and noble ingredient that has always been used for the production of fine cakes, pies and patisserie.
The hazelnut brittle is particularly fine, with a diameter of only 1.5 - 5 mm, roasted and lightly sugared. You can use this roasted hazelnut brittle for sprinkling, decorating and decorating cakes, pies or small patisserie.
The hazelnut brittle also comes into its own as a coating for chocolates and truffles
