The history of ravioli - a journey through centuries of Italian cuisine
Ravioli are one of the most famous dishes in Italian cuisine, but where do these small filled pasta pockets actually come from? Their history is as complex as their filling. The first written evidence of ravioli appears in the 14th century. A merchant from Prato, Francesco di Marco Datini, mentioned them in his letters, and early recipes can also be found in Venetian cookbooks of the time. At the time, they were considered a festive dish for wealthy households, a far cry from the everyday dish they would later become. Scholars still argue about the origin of the name today. One theory derives it from the Latin "rapa", meaning turnip, a common filling ingredient in the past. Others see the root in the Italian "riavvolgere", to wrap or roll up. Both explanations fit the essence of this pasta: something good, carefully wrapped.
It is also interesting to note that filled dumplings are not a purely Italian invention. Similar dishes exist in Chinese cuisine as jiaozi, in Russian as pelmeni and in German as Maultaschen. Whether these are parallel developments or culinary exchanges along the old trade routes remains an open question. In Italy itself, countless regional variations have developed over the centuries. In Liguria, ravioli are traditionally filled with herbs and ricotta, in Emilia-Romagna meat fillings are the main ingredient, in Sardinia sheep's cheese and saffron are used. Each region, indeed almost every family, kept its own recipe like a family secret. With the great wave of emigration in the 19th and early 20th centuries, ravioli traveled around the world. Italian immigrants brought their recipes to America, Australia and South America, where the dumplings quickly became part of the local cuisine and new variations were created. Today, ravioli have long since become a global cultural asset. Ready-made products fill supermarket shelves around the world, but the true soul of this pasta still lies in its handmade nature. The smell of fresh pasta dough, the carefully distributed filling, the even pressure of the stamp: this is the story of ravioli, which is rewritten in every kitchen.
Easy to use for perfect results
Homemade ravioli, tagliatelle or any other form of pasta are unbeatable! Accompanied by your favorite salsa, homemade pasta is simply something special! With our unique adjustable pasta double pasta wheel, they are not only a treat for the palate, but also a real eye-catcher on any plate.
This is how it works: Roll out your pasta dough evenly on the floured work surface, about 1-2 mm thin depending on the recipe. Adjust the width of the wheels, hold the pasta wheel loosely in your hand with the handle relaxed in your palm. Place the wheels at the upper end of your desired cutting line and roll them through the dough with light, even pressure in a fluid movement from top to bottom. The weight of the brass does the work, you hardly have to press at all. For parallel strips, use a ruler or dough card as a guide. For filled pasta, roll along the edges after filling and folding the dough to separate the individual pieces cleanly and seal them at the same time.
Cleaning the pasta double pasta wheel
Before you use the product for the first time, it should be washed thoroughly. The dough wheel can be cleaned quickly after each use. Rinse it briefly under warm water and then allow it to dry thoroughly. Please do not clean in the dishwasher.
