Pasta machine Atlas 180

Thinly rolled out dough sheets for making lasagna sheets, ravioli and pasta of all kinds are very easy to make with the Atlas 180 pasta machine. Subsequently, the shapes can also be cut immediately with the machine, with a pasta dough wheel, ravioli formers or a ravioli mold you create more delicious pasta varieties. The machine can be driven by hand with the crank. With 10 different settings, you can find the perfect thickness for your pasta.

Pasta dough

250 g white flour

250 g durum wheat semolina

20 g powder at will (tomato, spinach, wild garlic, beet or sepia ink)

5 eggs

Mix the dry ingredients together and form a hollow in the middle. Add the beaten eggs and knead everything into a dough. Finally, the dough should be nice and smooth and not stick to your hands. Add a little flour or water, depending on the consistency, until the dough is comfortable to work with. For a particularly nice dough, don't add salt and don't use eggs straight from the fridge.

Attach the pasta machine to the table or your work surface using the screw clamp. Then place the crank in the opening provided. Then cut a piece of the dough and let it roll through the pasta machine on the 0 setting. Fold the dough and repeat the process until it has taken on an elongated and even shape. Then set the machine to 1 and let the floured and, if necessary, halved dough sheet pass through. Now you can increase one step after each pass until the desired dough thickness is reached.

You can process the finished dough sheet into pasta, ravioli and lasagne sheets and, if necessary, dry or freeze it. To do this, place the hand crank in one of the openings for the cutting rollers and let the dough sheet run through. The finished wide or thin ribbon noodles can be placed on a kitchen towel, should you cook them immediately afterwards. To dry, hang the pasta on the pasta rack. They should dry like this for about five to six hours. Well packed, the pasta can be stored for up to one month.

Homemade pasta requires a shorter cooking time, if they are quite fresh and rather thin, already two to four minutes are enough, dried they are ready after four to six minutes. Then serve them with a delicious sauce and some cheese.

Delicious filled pasta can also be made from the individual dough sheets with the help of a ravioli mold or a ravioli molder. You can find out exactly how this works right in the description of the corresponding products. So you can refine the homemade pasta with delicious fillings.

A brush is sufficient for cleaning; the machine should never be cleaned with water. Nevertheless, to achieve a thorough cleaning, remove the individual rollers, combs and cutting rollers from the machine and brush them off. The same applies to the parts that cannot be removed.
