Pasta machine Atlas 150 with attachments
With the 15 cm wide pasta machine you can make pasta of all kinds in no time. Cut large rectangles for a lasagna, fine strips for fettuccine, tagliolini, jagged reginette, filled raviolini or spaghetti directly with the machine. Even long and up to 15 cm wide dough sheets for ravioli and for cutting yourself are rolled out very easily.

Pasta machine Atlas 150 with attachments
Thinly rolled out dough sheets for making lasagna sheets, ravioli and pasta of all kinds are very easy to make with the Atlas 150 pasta machine. Subsequently, the shapes can also be cut immediately with the machine, with a pasta dough wheel, ravioli formers or a ravioli mold you create more delicious pasta varieties. The machine is powered by a hand crank, so you can work at your own pace. With 10 different settings and five different cutting rollers, you create the perfect pasta, spaghetti and ravioli.

Pasta dough
250 g white flour
250 g durum wheat semolina
20 g powder at will (tomato, spinach, wild garlic, beet or sepia ink)
5 eggs
Mix the dry ingredients together and form a hollow in the middle. Add the beaten eggs and knead everything into a dough. Finally, the dough should be nice and smooth and not stick to your hands. Add a little flour or water, depending on the consistency, until the dough is comfortable to work with. For a particularly nice dough, don't add salt and don't use eggs straight from the fridge.
Attach the pasta machine to the table or your work surface using the screw clamp. Then place the hand crank in the opening provided. Cut a piece of the dough and let it roll through the pasta machine on the 0 setting. Fold the dough sheet and repeat the process until it has assumed an elongated and uniform shape. Then set the machine to 1 and let the floured and, if necessary, halved dough sheet pass through. Now, after each pass, you can set one step higher until the desired dough thickness is reached.
The finished dough sheet can be processed into pasta, ravioli and lasagne sheets and, if necessary, dried or frozen. To do this, place the appropriate cutting roller on the machine and the crank in one of the openings. Now let the dough sheet run through it. The finished pasta can be put on a kitchen towel, if you cook it immediately afterwards. To dry, hang the pasta on the pasta rack. They should dry in this way for about five to six hours. Well packed, the pasta can be stored for up to one month. If you would like to make ravioli, two sheets of dough are lightly pressed together and lightly pulled into the ravioli rollers. Then put on the white funnel, add some filling and continue turning until the dough sheets are ready.
Homemade pasta requires a shorter cooking time, if they are quite fresh and rather thin, so already two to four minutes are enough, dried they are ready after four to six minutes. Then serve them with a delicious sauce and some cheese.
You can also make differently shaped ravioli from the individual dough sheets with the help of a ravioli mold or a ravioli molder. How this works exactly, you will find immediately in the description of the corresponding products. So you can refine the homemade pasta with a special mold.
A brush is sufficient for cleaning; the machine should never be cleaned with water. Nevertheless, to achieve a thorough cleaning, remove the individual rollers, combs and cutting rollers from the machine and brush off. The same applies to the parts that cannot be removed.
