One theory derives it from the Latin "rapa", meaning turnip, a common filling ingredient in the past. Others see the root in the Italian "riavvolgere", to wrap or roll up. Place the wheel at the upper end of your desired cutting line and roll it through the dough with light, even pressure in a fluid movement from top to bottom. The weight of the brass does the work, you hardly have to press at all. For parallel strips, use a ruler or dough card as a guide. For filled pasta, roll along the edges after filling and folding the dough to separate the individual pieces cleanly and seal them at the same time.
