How to decorate with chocolate motifs

Place the motifs on a surface that is just beginning to set: freshly whipped cream, buttercream or ganache that is not yet completely firm. On hard icing, a dot of melted chocolate holds them in place. Handle the pieces by the edges or with tweezers to avoid fingerprints.

Ideally a few weeks before the holidays. Orders placed by 4 pm are dispatched the same day by A Post and usually arrive the next working day.

Do the motifs keep in the fridge?

Yes, on a chilled cake they hold their shape. Take the cake out just before serving so that no condensation forms on the chocolate.
