Crispy balls or sugar pearls?

Go for crispy balls and Crispy chocolate balls when you want volume and crunch. Place the XL balls one by one or in small clusters – on a cupcake swirl, around the base of a cake or as a crown on a drip cake. The mini balls are for scattering more widely. Chocolate pearls fit wherever chocolate is already involved: on ganache, brownies or homemade chocolate bars. Sugar pearls and nonpareils are small and fine – ideal for biscuits, gingerbread and delicate lines, for example along the edge of a cake.

When to add them: tips from our kitchen

  • On a moist surface: pearls stick without glue if you scatter them over icing that is still wet or freshly spread couverture. On dry surfaces, a dot of royal icing or melted chocolate does the job.
  • After baking: decorate your bakes once they have cooled, so the shine and crunch are kept.
  • On cream, last of all: on whipped cream and mousse, crispy balls soon go soft and coloured pearls can bleed. Add them just before serving.
  • Keep them dry: store opened packs well sealed in a cool, dark place – but not in the fridge, where they draw moisture.

An idea to try: our drip cake looks wonderful crowned with gold crispy balls. For extra sparkle, see Glitter, gold dust & gold leaf, and for everything else Edible Christmas Decorations.

Frequently asked questions

What is the difference between crispy balls and sugar pearls?

Crispy balls are larger and crunchy, while sugar pearls are small, hard pearls made of sugar. For volume and crunch choose crispy balls; for fine accents on biscuits, sugar pearls or nonpareils are the better choice.

Can I mix different colours?

Yes. Gold with copper and burgundy looks warm and festive, silver with red feels like a classic Christmas. Stick to two or three shades and your decoration stays calm and elegant.
