With panettone flavouring, rum flavouring and the spiced speculoos and pumpkin spice pastes, you can bring the scent of the holidays to yeast doughs, cakes and chocolates. The six products in this category follow the calendar: from the Easter colomba in spring and pumpkin in autumn to panettone and pandoro at Christmas.

Festive flavours through the year

  • Easter: the Ostertaube (colomba) flavouring, 50 g, gives the Italian Easter dove cake and other sweet yeast bakes their typical note.
  • Autumn: the pumpkin spice flavour paste, 100 g, tastes of pumpkin pie spice and suits buttercream, cheesecake mixtures, cupcakes and ganache. For pumpkin season, try our pumpkin praline recipe with vanilla ganache.
  • Advent: the speculoos flavour paste, 100 g, brings a spiced biscuit taste to creams, ice cream and chocolate fillings, without any crumbs.
  • Christmas and New Year: panettone and pandoro flavourings, 50 g each, for the great Italian festive breads, but also for Zopf, kugelhopf or butter biscuits.
  • All year round: rum flavouring, 50 g, for rum truffles, savarins, rum and raisin ice cream and chocolate cakes.

Tips from our bakery

In yeast doughs, add the flavouring together with the butter and egg yolks so the taste spreads evenly. Use it sparingly: a festive flavouring should recall citrus, vanilla and butter, not taste like perfume. The pastes are thicker than liquid flavourings and are easy to stir into a finished cream. To strengthen the spicy note, add cinnamon, star anise or tonka from the floral, mint & spice flavours, or vanilla from Vanilla & spices.

Frequently asked questions

What is the difference between panettone and pandoro flavouring?

Both are meant for Italian festive bakes. Panettone is traditionally linked with citrus and raisins, pandoro more with vanilla and butter. Everything else for panettone is in our Panettone category.

Can I use the speculoos paste for biscuits too?

Yes, it gives doughs and fillings the typical flavour. To learn how real speculoos and Tirggel are made, join our Tirggel and speculoos course in Adliswil.

When should I order for the holidays?

Orders placed by 4 pm leave the same day by A-Post and usually arrive the next working day. You will find more flavours under Flavourings.
