Tips for fine details

The small hollows in novelty moulds easily trap air bubbles. Tap the mould firmly on the work surface after filling. Details such as the snowy peak of the Matterhorn or the owl's eyes are dabbed in first with a finger or a fine brush. Let them set, then add the couverture chocolate.
