Chocolate pens and writing chocolate let you put a name on a birthday cake, draw a face on a cupcake or pipe fine lines across biscuits. The pens come in 10 colours of 25 g each; Scrivosa writing chocolate comes in a 1.25 kg pack for anyone who decorates in larger quantities.
Good to know: the pens and Scrivosa are made with vegetable fat plus cocoa or milk powder, not from couverture chocolate. They are designed for lettering and decorating.
Stand the pen in a warm water bath until the contents are runny; the temperature and time are given on the pack. Knead it gently now and then. Scrivosa is also warmed in a water bath and then poured into a small piping bag or paper cone.
Write your text on baking paper first. Hold the tip just above the surface and let the mass flow rather than squeezing hard. Lettering is cleanest on fondant, marzipan, ganache or set icing; on whipped cream it spreads.
Pipe stars, hearts or letters onto baking paper, let them set and peel them off. You then have ready-made decorations to place on cakes and desserts.
Yes. Let the rest set, keep the pen somewhere cool and warm it in a water bath again next time.
Dark and black for writing on pale fondant, white on chocolate cakes, pastel pink and light blue for christening and children's cakes.
For patterns across a whole surface, chocolate tattoos are ideal. Festive pieces are in chocolate Christmas decorations, everything else in chocolate decorations. To learn how to decorate cakes, join our cake decorating course in Adliswil.
