Wood pulp proofing baskets are the shape-retaining alternative to a woven basket: light, smooth inside and often with a moulded pattern that shows up as a fine flour print on your bread. The material draws a little moisture from the surface of the dough, so the loaf releases easily and develops a good crust.
Wood pulp consists of finely ground, pressed wood fibres. The basket is moulded in one piece, pattern included. Rattan (cane) is coiled in a spiral to form the basket. It leaves the classic flour rings, and ours come with a cloth liner. In use there is little difference: flour, add the dough, prove, turn out. Rattan baskets in many sizes are among our round proofing baskets.
Wood pulp does not like water. After use, let the basket dry completely in the air and only then knock or brush out the flour. A suitable cleaning brush is in our accessories. Over time a fine layer of flour builds up that helps stop the dough sticking. Store the baskets somewhere dry and airy, never in a closed plastic bag.
No. The basket is only for proving. The loaf is baked after turning out, on a tray, a baking stone or in a pot.
Rice or rye flour sticks less than white flour and shows the pattern nicely. All shapes and materials are among our proofing baskets.
