For snowmen, white couverture is the natural choice. Brush the nose, buttons and scarf into the mould with coloured cocoa butter first, then pour the white over it. Reindeer and squirrels look most natural in milk or dark couverture, and a white tummy or a pale star adds a highlight.

White couverture is more delicate than dark: warm it slowly and temper it carefully, otherwise it thickens and struggles to fill fine details such as antlers or ears. With multi-part moulds such as the 3D reindeer, take your time assembling the pieces before you decorate.

Casting winter animals with children
