With a croissant cutter you cut rolled-out dough into even triangles in a single pass – the basis for beautiful croissants. Here you will also find dough cutters with several wheels, pastry wheels for straight or fluted edges and a dough docker. That way every piece is the same size and bakes evenly.
Cut it cold: laminated croissant dough is easiest to cut when well chilled. The butter layers stay intact and the edges clean.
Roll out evenly: a croissant cutter is only as precise as your sheet of dough. A good rolling pin helps you reach the same thickness everywhere.
Docking: prick shortcrust pastry for tarts before baking. It will not puff up and stays flat. Then place your pieces on a tray from baking trays and baking paper.
For classic breakfast croissants, the medium sizes are a good choice. The smallest makes mini croissants for an aperitif, the largest generous croissants.
In our bakery in Adliswil, our croissant course shows you how to laminate, cut and shape the dough. More equipment is waiting among our bread aids.
