Less is more: tips from our kitchen

Gold leaf is so thin that it sticks to warm fingers instantly. Pick it up with tweezers or a dry brush and place small pieces exactly where you want them on chocolates, ganache or the edge of a cake. Gold dust is dabbed on with a dry brush; work over a plate so that none of it goes to waste.

Shake glitter spray well and spray in short bursts from a little distance until the shimmer is just right – lovely on buttercream, couverture chocolate and sugar decorations. Sprinkle or brush on the shimmer powder while icing or chocolate is still slightly tacky. Scatter the "Goldflimmer" flakes like sprinkles – they look best as a narrow border or over a single star. Use the food pen on dry surfaces such as fondant, sugar decorations or fully dried icing. And the golden rule: a touch of gold rather than an all-gold cake.

Gold on chocolate looks particularly beautiful combined with chocolate transfer sheets. To make the chocolates to go with it, follow our recipe for delicious Christmas chocolates. You will find all other ideas in Edible Christmas Decorations.

Frequently asked questions

Which gold should I use for what?

Gold leaf for individual elegant accents on chocolates and cakes, gold dust and glitter spray for an all-over shimmer, gold flakes for sparkling borders and the food pen for fine lines and lettering. If you want texture and crunch, go for gold crispy balls or sugar pearls instead.

Can I put glitter on whipped cream?

Yes, but only just before serving. On moist cream the powder dissolves easily and loses its shine. On buttercream, ganache, fondant and couverture the shimmer lasts much longer.

How should I store gold leaf and glitter?

Dry, well sealed and away from light. Keep gold leaf flat in its original packaging so the sheets do not crease.
