Bread spice, gingerbread spice and coloured flavour powders turn a simple dough into something special. Bread spice gives a farmhouse loaf its aroma, gingerbread and speculaas spice bring Christmas to your biscuits, and spinach, beetroot or tomato powder colour bread and pasta. Here you will find both: spices for flavour and powders for colour.

What you will find here

  • For bread: bread spice 100 g, bread spice mix 80 g and green aniseed 50 g, plus fine red salt 300 g and black salt 290 g for sprinkling.
  • For gingerbread and biscuits: gingerbread spice 60 g, speculaas spice 45 g and 50 g, and ground Ceylon cinnamon 50 g.
  • Coloured flavour powders: spinach, beetroot, tomato, porcini and wild garlic powder, 100 g each, plus dried wild garlic 100 g and squid ink 8 x 4 g.
  • For pasta: herb pasta spice mix powder, 100 g.
  • Tiger paste: Mediterranean or with pepper and sea salt, 200 g each – for the mottled crust of tiger bread.

Tips from our bakery

Coloured bread and pasta: stir the powder into the flour first so the dough colours evenly. Spinach gives green, beetroot pink to red, tomato orange-red, squid ink black. Start with a little and add more if needed, as the flavour grows stronger with the colour. Equipment for pasta and ravioli is in our Pasta category.

Wild garlic: wild garlic powder and dried wild garlic bring a taste of spring all year round to rolls, pull-apart bread or spätzli. For inspiration, try our pull-apart bread with fresh wild garlic pesto.

Gingerbread: the spices develop their aroma best when the dough can rest before baking. Our simple honey gingerbread recipe is a good start; moulds and equipment are under Gingerbread baking.

Frequently asked questions

What is tiger paste for?

You spread it over the dough before baking. In the oven it cracks and creates the typical mottled pattern of tiger bread.

How should I store spices and powders?

Tightly sealed, dry and dark. That way colour and flavour last longest.

Do you have more spices?

Yes, spices for fillings and desserts are under Spices & spice blends, and more bread ingredients under Flours & Ingredients.
