Mona Lisa Power Flower are small petals of coloured cocoa butter that let you colour chocolate, ganache and glazes without any liquid colouring. Instead of adding drops and hoping for the best, you simply count petals. That way you hit the shade you want and can repeat it next time.

Colouring petal by petal

Everything is based on three primary colours: yellow, red and blue. From these you can mix almost any shade, from soft pastels and fine gradients to even, solid colour. Each petal is a set portion of colour, so dosing is clean and precise, with no bottle that suddenly pours too much.

The colour chart shows you which mix gives which shade. Note how many petals of each colour you used, and your next batch of chocolates or macarons will match exactly.

Classic or natural: our range

  • Classic line in yellow, red and blue, in 50 g and 500 g, plus a 4-piece set.
  • Natural line in yellow, red and blue, in 50 g.
  • Two colour charts, one for the classic and one for the natural line.

The petals are suitable for chocolate, cupcakes, cakes, macarons and glazes.

Tips from our kitchen

  • Add the petals to slightly warmed couverture or ganache and stir until they have melted.
  • White couverture chocolate gives the purest shades.
  • For buttercream, first dissolve the petals in a little melted cocoa butter, then stir it in while lukewarm.
  • If you work with tempered chocolate, our guide how to temper chocolate correctly will help.

Which chocolate colour for what?

Power Flower is ideal when you want to colour a whole batch. For painting or airbrushing moulds, choose coloured cocoa butter. Fat-soluble powder colours also colour chocolate, but you dose them by eye. If you prefer paste, try Colour Mill; for drops, there is liquid chocolate colouring. You will find every option under chocolate colours and the full range under food colouring. To learn how to cast your own bars, join our chocolate bar course in Adliswil.
