Patterned proofing baskets press a design into the floured surface of the dough while it proves; after baking, it stands out pale against the golden crust. With very little effort, a simple loaf becomes a bread that catches the eye, on the table or as a gift. Heart, wheat ear, crown, plait or spiral: the pattern is moulded right into the basket.
The design comes from the flour that stays in the grooves. So dust the basket generously and evenly, ideally with rice or rye flour, and tap out the excess. A well-tensioned, fairly firm dough shows the pattern more clearly than a very soft one. Do not let the loaf over-prove, or the design will blur in the oven. Turn it out carefully and score only at the edge, or not at all, so the pattern stays intact.
Many patterned baskets are made of wood pulp. How this material differs from rattan and how to care for it is explained under wood pulp proofing baskets.
Yes. A slowly ripened dough made with sourdough or yeast can be shaped tightly and rises calmly in the basket – ideal for a clear design.
Take inspiration from our country bread with a wheat-ear pattern. Shapes without a pattern are among all our proofing baskets.
