An oval proofing basket gives your bread the classic elongated shape of a farmhouse loaf or a long Swiss Ruchbrot. In the basket the dough rises evenly, keeps its tension and can then be turned out neatly onto a tray or baking stone. We offer oval, rectangular and long proving baskets in rattan, wood pulp and plastic.

Which oval and long proofing baskets do we offer?

  • Rattan with liner: oval cane (rattan) basket in 25 x 15 x 8 cm and 35 x 15 x 8 cm, each with a cloth liner.
  • Oval baskets: in 21.5 x 15 x 8 cm, 25 x 15 x 8 cm and 35 x 15 x 8 cm, plus the oval basket 23.5 x 12 cm and the oval wheat-ear basket 20 x 14 cm.
  • Wood pulp: oval with ridges in 23 x 12 x 7 cm and 29 x 13 x 7 cm, rectangular with a plait or wheat-ear pattern in 25 x 13 x 7 cm.
  • Rectangular and long: rectangular baskets of 26.5 cm and 38.5 cm, the Urkorn rectangle 24 x 12.5 cm and a 36 cm baguette basket.
  • Plastic: plastic baskets in 23 x 14, 27 x 12, 29 x 13 and 35 x 13 cm.

Tips from our bakery

Pre-shape the dough into a ball first, let it relax briefly, then roll it up tightly into a long loaf. Place it seam side up in the well-floured basket. Make sure the turned-out loaf will still fit on your tray and in your oven, especially with the long shapes from 35 cm. One long cut down the length gives an oblong loaf a lovely ear. You will find the right tool among our bread lames.

Frequently asked questions

What is the difference between wood pulp and rattan?

Rattan is coiled into a basket and leaves the familiar flour ridges. Wood pulp is made from pressed wood fibres and often carries a moulded pattern. Read more under wood pulp proofing baskets.

Where can I learn to shape bread?

Easiest with a professional at your side: in our bread courses in Adliswil. Round shapes and accessories are among all our proofing baskets.
