Liquid chocolate colouring is the easiest way to colour couverture or white chocolate drop by drop. According to the manufacturer, our fat-soluble Decora food colourings (15 g) are made for fatty foods such as chocolate and buttercream. They come in nine colours: blue, yellow, green, orange, pink, red, black, violet and white.
The dropper bottle lets you dose very precisely, so even soft shades are easy to hit. The nine basic colours are enough to mix plenty of shades yourself: red and yellow make orange, blue and red make violet, and white lightens any tone. Use black sparingly for deep, dark colours.

Shake the bottle well every time before use. Add the colour to gently warmed or tempered chocolate and stir thoroughly after each drop. White couverture chocolate is the best base, as only there do pink, yellow or light blue look truly clean. Never use water-based food colouring, because water makes chocolate seize. That depends on the shade you want and on the chocolate. Start with a few drops and only add more once you have stirred it through.
You can, but the colour will barely show. For bright shades, use white couverture.
