Rose flavouring, violet, peppermint or tonka: these flavours leave a lasting impression, as long as you dose them well. In this category you will find seven floral, fresh and spiced flavourings for chocolates, macarons, ice cream and desserts, either as a liquid flavouring or as a paste.

Our floral, mint and spice flavourings

  • Flowers: rose flavouring and violet flavouring, 50 g each. Rose is the classic for macarons and raspberry desserts, while violet pairs with blackcurrant, blueberry and white couverture chocolate.
  • Mint: peppermint flavouring, 50 g, and peppermint flavour paste. The flavouring adds freshness to ganache and ice cream, the paste suits buttercream and macaron fillings.
  • Spices: star anise flavouring 50 ml and cinnamon flavouring 50 g for Christmas biscuits, mulled wine chocolates and spiced ganache, plus the tonka bean paste, 50 g, with its warm note somewhere between vanilla, almond and caramel.

Less is more: tips from our bakery

Floral flavours tip over quickly: one drop too many and rose starts to taste of soap. So add liquid flavourings one drop at a time, stir well and taste, ideally in the finished, slightly cooled mixture. Pastes are creamier and spread easily through creams. One advantage of the spice flavourings: cinnamon flavouring gives a white ganache a cinnamon taste without the dark specks that ground cinnamon would leave. For the finishing touch, decorate with real petals from Edible flowers & spices.

Frequently asked questions

Which fruits go with rose and violet?

Rose pairs well with raspberry and strawberry, violet with blackcurrant and blueberry. You will find the right partners among the fruit flavours. In our macaron courses in Adliswil you learn to bake and fill macarons yourself.

How do I use the tonka bean paste?

Sparingly, a bit like vanilla: in ganache, crème brûlée, ice cream or buttercream. Tonka goes well with dark couverture, coffee and caramel. Vanilla and other spices for fillings are in Vanilla & spices.

Which flavours suit Christmas?

Cinnamon and star anise are the base, and peppermint brings freshness to chocolate biscuits. For an even more festive touch, try speculoos, rum or panettone from the festive & rum flavours; you will find every flavour under Flavourings.
