A good baking tray is the basis for crisp rolls, croissants, tarts and biscuits. We offer solid and perforated aluminium baking trays in common oven sizes, a tray with a rim and an adjustable perforated tray. What matters most is that the tray fits your oven and suits what you want to bake.

Which baking trays do we offer?

  • Perforated aluminium trays: 43 x 35 cm, 44 x 35 cm and 45 x 35 cm, plus a 43 x 35 cm version with open ends.
  • Solid aluminium trays: 43 x 35 cm and 44 x 35 cm.
  • With a rim: tray 43.5 x 33 x 2.5 cm, handy for tarts, traybakes and juicy doughs.
  • Adjustable: adjustable perforated metal tray, 40 x 35 cm.

Perforated or solid tray?

A perforated tray lets heat reach the underside and moisture escape. Rolls, baguettes, croissants and pretzel bakes get an evenly crisp base. Use a solid tray for biscuits, soft doughs and anything with a filling or topping that might drip. If you bake a lot of bread and pastries, it is best to have both.

Tips from our bakery

Before buying, measure the inside width of your oven and the distance between the shelf runners: a single centimetre can decide whether a tray fits. Aluminium heats up quickly and evenly. To stop anything sticking to or slipping through a perforated tray, lay a perforated silicone mat or baking paper on top. After baking, move everything onto a cooling rack so the base does not turn soggy.

Frequently asked questions

Can I bake biscuits on a perforated tray?

Yes, with baking paper or a mat underneath. For delicate biscuits such as our Mailänderli, a solid tray is still the easier choice.

Where can I find everything for the tray?

Trays, baking paper and mats are all together under Baking tray & baking paper.
