A round proofing basket supports your dough while it rises and gives the loaf a lovely domed shape. Whether a rustic farmhouse loaf, a Swiss Ruchbrot or a sourdough boule: in a round banneton the dough keeps its tension and does not spread out flat in the oven. Here you will find round proofing baskets in many sizes and materials.

Which round proofing baskets do we offer?

  • Rattan with liner: the classic cane (rattan) proving basket in Ø 17, 19, 23 and 25 cm, each with a cloth liner. Without the liner the coils leave the typical flour rings on the crust; with it, the surface stays smooth.
  • Wood pulp: round wood pulp proofing baskets with ridges in Ø 18 and 22 cm, with a spiral or heart in Ø 18.5 cm and with a waffle pattern in Ø 22 cm.
  • With a motif: round heart basket (Ø 19 cm), round crown (Ø 22 cm) and the ring basket (Ø 22 cm).
  • More sizes: round baskets in Ø 17, 19, 23 and 25 cm, in Ø 19 and 25 cm, and a plastic basket with Ø 20 cm.

Finding the right size

At the start the dough should fill about two thirds of the basket so it has room to rise. If you bake in a cast-iron pot, choose a basket that gives a loaf fitting into the pot with a little space around it.

Tips from our bakery

Dust the basket generously, ideally with rye or rice flour, as both stick less than white flour. Place the dough seam side up, let it prove, then turn it out onto baking paper or straight into the hot pot. After use, knock out the flour and let the basket dry completely in the air. Brushes and liners are in our proofing basket accessories.

Frequently asked questions

Do I need the cloth liner?

Not necessarily. With a liner, soft dough releases more easily and the crust stays smooth; without it you get the classic ring pattern.

Which recipe suits a round banneton?

Try our country bread with a wheat-ear pattern. Oval, patterned and other shapes are among all our proofing baskets.
