A proofing basket liner, a cleaning brush and plastic dough sheets make everyday life with your banneton easier. The liner stops soft dough from sticking, the brush keeps ridges and coils clean, and the sheets protect the dough from drying out while it proves. Here you will find everything for your proofing basket, at home or in the bakery.
Liner or no liner? For very wet doughs a liner is worth it, as the loaf will release reliably. If you want the typical flour rings or a pattern on the crust, bake without a liner and dust the basket directly.
Brush rather than wash: let your basket dry completely after use, then brush out the flour. Dried dough residue comes off far more easily dry than wet. Shake out the liner and let it dry thoroughly too.
Cover for a long prove: if your dough ripens overnight in the fridge, cover the basket with a sheet so that no skin forms. For an even temperature while proving, see our proofing boxes and proofer. Classic couche cloths for baguettes and loaves on a board are among our dough cloths.
The liner comes in small and large. Measure your basket and compare it with the dimensions given on the product.
Round baskets in many sizes are among our round proofing baskets, all shapes and materials among our proofing baskets.
