A stable cake cream, a velvety-smooth panna cotta or a clear fruit jelly – they all start with the right gelling agent. This Leaf gelatine from RUF, containing 12 sheets of food-grade gelatine, is odourless and flavour-neutral, precisely measurable and easy to work with. Simply soak for 5 minutes in cold water, squeeze out, dissolve and gradually blend into the mixture – this creates a smooth, even consistency without lumps, giving creams and fillings the stability they need so that a cake truly delivers when sliced. Never let the Gelatine boil, so that its gelling power is fully preserved – and just like that, a great idea becomes a dessert that wows.

RUF Gelatine Leaves, 12 pieces
No stable cream, no stable cake – it's as simple as that
Behind every cake cream that holds when sliced, behind every panna cotta that melts velvety on the tongue, and behind every fruit jelly that comes out of the mould clear and glossy, there is the right Gelling agent. Gelatine is indispensable in the bakery because it gives masses, creams and fillings exactly the firmness they need – not too much, not too little, but just right. Without a stable cream there is no stable cake, and without the right ratio there is no convincing result. RUF Leaf gelatine delivers both: reliable gelling power and an odourless, flavour-neutral quality that fully preserves the natural taste of the ingredients. The 12 sheets of edible Gelatine are sufficient for 1 litre of liquid – depending on the application and the desired firmness, the quantity can be adjusted precisely. The sheet form has a decisive advantage over powdered Gelatine: one sheet is one sheet – no weighing, no uncertainty, no clumping. Leaf gelatine swells evenly when soaked, can be squeezed out and dissolved cleanly, and blends particularly evenly into the mixture when stirred in, resulting in a smoother, more homogeneous consistency – and that is exactly what makes the difference between a good and a truly convincing result.
From cake filling to aspic – wherever firmness counts
RUF Leaf gelatine is suitable for all applications where masses, creams or liquids need reliable firmness. In cake creams it gives the filling the stability needed to keep the cake's shape when sliced – especially important for multi-layered cakes that are transported or left at room temperature for extended periods. In panna cotta it provides the characteristic velvety consistency – whether served directly in the glass or turned out, the quantity can be adjusted precisely to achieve the desired firmness. In fruit jellies and Cake glaze it delivers a clear, glossy result that sets off fruit and toppings to perfection. In mousses and cold desserts it gives the light mixture just enough support to remain stable without losing its airy, creamy texture. It is also ideal for savoury applications such as vegetable aspics and delivers a clear, appetising result.
The right quantity – and the result speaks for itself
The right amount of Gelatine depends on the desired firmness and the type of dish – and it pays to be precise here, because the difference between a cream that holds when sliced and one that collapses often comes down to one or two sheets. For jellies and cake fillings, 6 sheets per 500 ml are recommended – this gives a firm, sliceable result that is especially important for multi-layered and tall cakes, so the filling keeps its shape when cut and the cake doesn't collapse. For creamy desserts such as panna cotta or bavaroise that are served directly in the glass or in the mould and should have a softer, more velvety consistency, 4 sheets per 500 ml are sufficient. If these desserts are to be turned out, 6 sheets per 500 ml are recommended so the mixture safely holds its shape when turned and sits on the plate exactly as intended. In summer or at higher room temperatures, increase the quantity by 1 to 2 sheets per litre, as Gelatine is heat-sensitive and loses its firmness more quickly when warm. When cooking from a recipe, always follow the quantities specified there.
Soak, dissolve, temper – how to get it right every time
Preparation is straightforward as long as you follow the sequence. Place the required number of sheets individually in a bowl of cold water and soak for approx. 5 minutes until soft and pliable. Then squeeze out lightly and dissolve at a low temperature – never allow to boil, as Gelatine loses its gelling power at too high a temperature. For cold mixtures, do not pour the dissolved Gelatine directly into the entire mixture – instead, first add a little of the mixture to the Gelatine and stir, then add a little more to bring the temperatures in line, and only then stir the tempered Gelatine mixture into the remaining mass. This step prevents the Gelatine from clumping or forming strands. For warm mixtures, incorporate the dissolved Gelatine directly while stirring. Since Gelatine softens the flavour of sugar, salt, acids and spices, always taste and adjust seasoning after adding it. Store RUF Leaf gelatine in a cool, dry place, tightly sealed, protected from moisture and foreign odours, as Gelatine readily absorbs both and this can impair its quality. After opening, reseal the packet carefully and use promptly.
The Gelling agent that holds – and impresses
Leaf gelatine is not a specialist product for elaborate patisserie creations – it is a basic tool that deserves a permanent place in every bakery and makes the difference between a cream that holds and one that doesn't. RUF Leaf gelatine delivers a reliable, consistent result in every application: stable cake creams that hold when sliced and present the cake exactly as intended, velvety panna cotta and mousses that melt on the tongue, and clear fruit jellies that shine and show off every topping to perfection. With 12 sheets, odourless, flavour-neutral and precisely dosable, it is the most dependable choice for everyone who knows when baking and decorating: a cake is only as good as its filling – and a filling is only as good as the Gelling agent behind it. Once you've worked with it, you'll know at the very first slice: that's the difference you can see, feel and taste.
