Organic lemon zest, 5 g

Fresh as straight from the tree – without grating a single lemon

Anyone who bakes regularly knows the situation: the recipe calls for the zest of a lemon, but there's no fresh fruit to hand – or only a small amount is needed and the rest of the lemon sits unused in the kitchen. RUF Organic Lemon Zest solves this problem elegantly: the sachet contains 97% gently freeze-dried lemon peel from certified organic farming, refined with a little natural lemon oil, and its aroma intensity corresponds exactly to the zest of a whole lemon. The result is a fresh, fruity, and slightly tart lemon aroma that distributes evenly when worked into the dough and leaves no synthetic aftertaste – completely natural, completely fuss-free, and in the best organic quality. Gentle freeze-drying preserves the natural aroma of the lemon peel particularly well, since this process does not allow the volatile aroma compounds to be lost through heat as with other drying methods. The result is a lemon zest that smells fresher and more intense than conventionally dried products and, when worked into doughs, creams, and fillings, develops a noticeably more vibrant lemon aroma.

From cakes to jam – more versatile than you'd think

This lemon zest can be used wherever fresh lemon zest is called for – simply use it like grated lemon peel, i.e. stir it dry into the flour mixture or fold it directly into the finished dough. In sponge batters for lemon cake, Bundt cake, and pound cake, it provides that characteristic fruity-tart citrus note that makes the difference between a simple cake and a truly aromatic one. In shortcrust pastry, vanilla crescents, and fine biscuits, it gives the dough a subtle freshness without overpowering it, and in yeast dough for Zopf and Brioche it rounds off the aroma in a way you only really notice when you cut into it. In creams, mousses, and fillings, the Organic Lemon Zest develops its aroma particularly intensely, as it releases its aromatic compounds even more fully in a moist environment. For a classic Lemon cream for small cakes and tartelettes, stir it directly into the warm egg yolk and sugar mixture before adding the butter and lemon juice – this allows the aroma to penetrate deep into the cream and leaves a fresh, vibrant lemon flavour that is clearly distinguishable from bottled liquid aromas. For a lemon curd for sponge rolls and layered cakes, simply add the lemon zest together with the lemon juice to the pan and simmer gently until a silky-smooth, intensely aromatic curd forms. It can also be stirred effortlessly into light mascarpone or quark cream fillings, giving the filling a fresh citrus note that enlivens the flavour of the entire cake. In confectionery, lemon zest is a tried-and-tested ingredient for lemon Pralines and lemon Ganache: worked into a white or light Milk chocolate Ganache, it gives the filling a fresh, tart citrus note that beautifully balances the sweetness of the chocolate – simply bring it to the boil together with the cream and pour over the couverture so that the lemon aroma distributes evenly throughout the Ganache. It can also be worked easily into icings, glacé icing, and Fondant, giving the decoration a fresh citrus note that is particularly effective on vanilla and lemon cakes. For jams, preserves, and chutneys, it is a practical alternative to fresh zest – simply let it cook along, and the fruity lemon aroma is captured in the jar. It also has a place in savoury cooking: in marinades for fish and poultry, in salad dressings with olive oil, or in warming winter dishes such as mulled wine and spiced biscuits, it adds a Mediterranean, fresh-fruity note that is identical to fresh zest.

One sachet, one lemon – it's that simple

One 5 g sachet corresponds to the zest of a whole lemon and is perfectly sufficient for most recipes that call for one lemon. If you only need part of it, simply reseal the sachet carefully after use – thanks to the resealable packaging, the remainder stays conveniently ready for next time. Since the lemon zest is freeze-dried, it absorbs moisture from the air when left open – so always reseal the sachet firmly immediately after opening and store it in a dry place to preserve the aroma and prevent the zest from clumping. Therefore store the Organic Lemon Zest in a cool, dry, well-sealed place, protected from direct heat and sunlight. Since the product is very sensitive to aromas, it is advisable to store the sachet separately from strongly scented spices or foods so that the delicate lemon aroma is preserved. Once opened, use promptly.

Because fresh lemon aroma doesn't need a fresh lemon

Fresh citrus notes are among the most popular aromas in the bakery – and with this Organic Lemon Zest, they are available at any time, without grating, without residue, and without compromising on flavour. Made from 97% gently freeze-dried lemon peel from certified organic farming, refined with natural lemon oil, it delivers the full aroma of a whole lemon in a single small sachet – natural, free from synthetic additives, and with an intensity you would never expect from a dried lemon peel at first glance. Whether in a light sponge batter, a silky Lemon cream, the icing on a celebration cake, or a homemade jam – one simple step and the entire kitchen smells of fresh lemon, as if you had just cut one open. That is exactly what makes this lemon zest so special: it is not simply a substitute for fresh fruit – it is the fresh fruit, in its purest, most concentrated form, always within reach when you need it.
