Casting chocolate animals: tips from our kitchen

  • Temper properly: only tempered couverture sets with a shine and releases cleanly from the mould. Every step is explained in tempering couverture and chocolate correctly.
  • Details first: paint eyes, manes or spots into the clean mould with coloured cocoa butter before you cast. That is how the cow gets its patches and the tiger its stripes.
  • Fill the fine parts: trunks, horns, tails and legs are the tricky spots. Tap the filled mould gently on the table so air bubbles rise and the couverture reaches every tip.
  • Be patient when chilling: only unmould once the chocolate visibly shrinks away from the edge.

Chocolate animals for a children's party

Let every child choose their favourite animal: unicorn, dinosaur or panda. Cast the animals the day before so there is more time at the party to decorate them with sprinkles or a little white couverture. Wrapped in a small bag, each animal becomes a take-home treat for the young guests.
