Dark Chocolate Shavings, 100 g
Dark Chocolate Shavings – the final detail that makes everything perfect
Black Forest cake is almost unimaginable without chocolate shavings – but chocolate shavings have long been far more than a classic cake decoration. They give baked goods not only an attractive look but also complement flavour and texture in a special way. The even dark chocolate coating turns a plain surface into a cohesive whole and rounds off every cake both visually and in terms of taste. These Dark Chocolate Shavings stand for exactly that quality. Made from dark chocolate with 60% cocoa and real cocoa butter, they win you over with their bold, slightly bitter cocoa aroma and their pleasant, melt-in-the-mouth texture. They adhere reliably to freshly spread creams and icings, can be worked effortlessly into fillings, and hold their shape and texture right to the last piece – for an intense chocolate flavour that rounds off every baking creation in taste and lifts it visually.
Apply, press on, done
The application is simpler than you might think – and the result impresses straight away. For the shavings to adhere perfectly, pop the cake in the fridge for ten to fifteen minutes after spreading the cream. The cream firms up slightly but stays moist enough for the shavings to stick reliably. For the sides of the cake, put the shavings in a Bowl. Lift the cake with a coaster, tilt it slightly and use your free hand to gently press the shavings onto the side from bottom to top. Keep rotating the cake and repeat until the entire side is evenly and completely coated. For the top, simply sprinkle the shavings evenly and press them on lightly. Muffins, cupcakes and other small baked goods can be dipped or pressed directly into the Bowl of shavings – creating an even dark chocolate coating in one simple move. The result looks immediately professional and works perfectly even on your first attempt, with no specialist tools needed.
The Black Forest – and everything that comes after
When you think of chocolate shavings, you usually think of Black Forest cake first – and for good reason. The characteristic dark chocolate coating is part of its unmistakable appearance and carries the intense cocoa aroma right to the surface. With RUF Dark Chocolate Shavings you can nail this classic first time: they adhere reliably to the cream, hold their shape and deliver exactly the result that makes this cake so distinctive with their bold dark chocolate flavour. But their uses go far beyond that. Stirred into vanilla Buttercreams, mascarpone fillings or patissière creams, they bring intense chocolate notes and a pleasant texture – to keep their shape, fold them into the slightly cooled cream just before serving. Stirred into warmer mixtures they melt completely and release their flavour evenly, which is also a great option depending on the result you want. As a decoration on cupcakes, muffins and small tarts they create striking accents – especially on light-coloured creams, where the dark chocolate brown provides a strong visual and flavour contrast. In layered desserts, mousses or parfaits they bring a pronounced contrast between the light, creamy filling and the intense dark chocolate – both in flavour and in texture, as the shavings give your dessert a pleasant bite. Stirred into hot milk they create a full-bodied, bold drinking chocolate in just a few minutes, and sprinkled over ice cream they give every spoonful an intense chocolate note and a pleasing textural contrast.
How to store your chocolate shavings correctly
Chocolate is sensitive to heat, moisture and strong foreign odours – and shavings absorb environmental influences particularly quickly due to their large surface area. Storing them in the fridge is therefore not recommended: condensation can form when you take them out, causing the shavings to clump together, lose their adhesion to creams and suffer visually. The ideal storage place is cool, dry and protected from light, at a consistent room temperature. Temperatures above 20 °C or direct sunlight can cause fat bloom – a white coating on the chocolate surface that is completely harmless to health but does affect the appearance and texture of the shavings. After opening, close the packaging carefully and store in a cool, dry place. Chocolate quickly absorbs foreign odours – strong aromas nearby such as coffee, spices or onions can noticeably affect the delicate cocoa aroma.
Small detail, big impact
The Dark Chocolate Shavings are far more than pure decoration – they combine appearance, flavour and texture into a harmonious whole and provide, with minimal effort, the final crucial touch that turns a good bake into something truly special. Whether on the classic Black Forest cake, modern desserts or creative baking ideas: they deliver a convincing result every time. Anyone who has worked with them once knows why they have been indispensable in the bakery for generations.
