On a cake, several figures can be arranged together in different positions – on the cake surface, along the edge or pressed lightly into the Buttercream for a varied, spooky overall look. Royal icing is very sensitive to moisture – this is the most important thing to bear in mind when using and storing these figures. With too much moisture the decoration softens, loses its shape and the figure can become distorted. Therefore never place the figures on very moist surfaces – on freshly whipped cream, mascarpone or quark creams, only place the figures shortly before serving. On Fondant, Cake icing, Buttercream, icing or Ganache the figures can be placed a little earlier without any problem. Do not store near steam or in damp rooms. If the finished decorated baked good is stored in the fridge, keep the time there as short as possible – the moist fridge air can soften the royal icing over time and affect the shape of the figures. Store any remaining sugar figures in a cool, dry place, protected from direct sunlight and moisture – ideally at 12–20°C. Do not store in the fridge under any circumstances, as the moisture will immediately soften the royal icing and the figures will lose their shape. Keep in the original packaging until ready to use.
