Baking Soda, 50 g
Small in size, big in effect
Some ingredients barely get noticed – and for that very reason are often underestimated. Baking soda is one of them. This fine, white powder has been a staple of the baking craft for centuries and, for good reason, remains indispensable to this day. Behind its modest appearance lies a true all-rounder that can do far more than just make dough rise. RUF baking soda consists of 100% pure sodium bicarbonate – no additives, no fillers, and no unnecessary processing aids. Its strength lies in its versatility: it leavens acidic batters with particular evenness, stabilises airy beaten egg whites, balances excess fruit acid in compote and jam, and softens water so that the Liquid aroma of coffee and tea can develop even more fully. A single product takes on several tasks at once, making it an essential item in every well-equipped kitchen and bakery. Home bakers and professionals alike have trusted the properties of baking soda for generations. RUF Lebensmittelwerk has also relied on proven quality for over 100 years, combining traditional baking knowledge with dependable production. The result is a product that delivers every time.
Baking soda or Baking powder – what's the difference?
Baking soda and Baking powder are often confused, but they serve different purposes. Baking powder is already a ready-made mixture of baking soda, an acidulant, and starch. This means it develops its leavening power independently of the other ingredients in the batter. Pure baking soda works differently. It only takes effect when it comes into contact with an acid. That is precisely its great advantage: the leavening reaction can be controlled deliberately. Ingredients such as buttermilk, yoghurt, lemon juice, vinegar, sour cream, or natural Cocoa powder provide the necessary acid. As soon as baking soda and acid meet, carbon dioxide is produced. The fine gas bubbles leaven the dough from the inside out and ensure a particularly even volume as well as a fine, light crumb. Used in the right quantity, it produces airy cakes, muffins, cookies, pancakes, or breads with a pleasantly tender texture. At the same time, baking soda neutralises excess acid and creates a well-balanced flavour.
The right application determines the result
Baking soda goes a long way, yet achieves a great effect. For that very reason, accurate measuring plays a decisive role. If too much is used, a slightly soapy or bitter taste can develop. With the right amount, baked goods turn out reliably well. As a rule of thumb: one teaspoon (approx. 5 g) is enough for around 500 g of flour, provided that approximately six tablespoons of lemon juice or vinegar, or a comparable acidic ingredient, are used at the same time. The baking soda is first thoroughly mixed into the dry ingredients, while the acid goes into the liquid components. The leavening reaction only begins when the two are combined – so the batter should be baked as promptly as possible after mixing. The acid used reacts completely and is no longer detectable in the finished bake.
Much more than a leavening agent
Baking soda also proves its versatility well beyond baking. For particularly firm beaten egg whites, just a small pinch in the egg white is enough. It stabilises the protein structure and ensures that the foam retains its volume even when folded in. For compote, jam, or other fruit preparations, about half a teaspoon per kilogram of fruit will bind excess fruit acid. The result is a more harmonious, milder flavour without masking the natural fruit aroma. Baking soda has long been valued for cleaning fruit and vegetables too. One to two teaspoons per litre of water help to thoroughly loosen residues of dirt and deposits. Even coffee and tea lovers benefit from its properties: a small pinch of baking soda per litre of water reduces water hardness and supports a finer development of the drinks' aroma.
Store correctly – stay effective
To keep baking soda at full leavening strength, it should be stored dry, tightly sealed, and at room temperature. Since sodium bicarbonate absorbs moisture from the air, an open package can lose its effectiveness over time. After opening, it is therefore advisable to seal the packaging carefully and use the contents as soon as possible. That way, your usual baking quality is always on hand whenever you need it.
