Decora

What Carlo De Luca founded in Salerno in 1998 was Italy's answer to a gap that nobody else was seriously closing. In a country world-famous for its patisserie tradition, its confectioneries and its baking culture, a manufacturer had long been missing who consistently made the quality of professional kitchens accessible to everyone – not as a simplified hobby version, but as a genuine craft tool. Decora was that manufacturer. The De Luca family brought more than forty years of experience in catering and patisserie equipment to the venture – a foundation that has been perceptible from the very beginning: in the choice of materials, in the precision of detail, in the craft logic of the products.

Today Decora's range encompasses several thousand references, entirely conceived, developed and manufactured in Italy – with certified Italian suppliers, in a design language befitting the country's aesthetic standards, and in a quality recognised in over 50 countries. Baking tins and silicone mats, chocolate moulds, piping nozzles, panettone moulds, sugar decorations, packaging materials and much more – all from Salerno, for bakeries everywhere. At miniSchoggi, a growing selection from the Decora range is available.

Salerno, 1998 – Quality for Everyone, Not Just Professionals

Professional chefs knew it long ago: a perfect shortcrust base requires a perforated tart ring. A clean polycarbonate chocolate mould gives the praline its gloss. The right piping nozzle determines whether a buttercream rose succeeds or not. These tools existed – but they existed behind the kitchen doors of confectioneries, not on the shelf for home bakers.

Carlo De Luca saw this gap. His family had been active in catering and patisserie equipment for over forty years – he knew the professional side of the market from within. In 1998 he founded Decora in Salerno with a purpose as simple as it was consistent: develop products that meet the quality standards of professional kitchens while remaining accessible to everyone. No simplified hobby product. No dressed-up industrial product. Genuine patisserie quality – for everyone.

Made in Italy – Not as a Promise, but as a Working Principle

Every Decora product is conceived, developed and manufactured in Italy. In an age of global supply chains, this sounds more obvious than it is. For Decora it is a fundamental operational decision, made from the very beginning and never diluted. All production facilities, all suppliers – certified and locally anchored. The consequence: short development cycles, direct influence over material quality and manufacturing standards, a design language that meets the aesthetic standards of southern Italian craftsmanship.

The design team works throughout the year. New products are not created because a product line has grown old, but because practice raises new questions. These questions drive Decora – and the answers find their way into the range. Sustainability is not a side topic: Decora uses recyclable and compostable packaging, minimal packaging volume and optimised logistics with a deliberately reduced carbon footprint.

Baking Tins and Silicone Mats – Precision as a Basic Requirement

Baking tins are the craft foundation of every bakery. The technical requirements – thermal conductivity, non-stick properties, dimensional stability under heat, ease of cleaning – differ considerably according to material and intended use. Decora offers baking tins in various materials: steel with non-stick coating for classic cake tins and tart rings, silicone for flexible specialty moulds and individual portions, perforated steel for shortcrust pastry work.

Perforation is not an aesthetic detail but a baking-technical principle: perforated tart rings and baking tins allow moisture to escape during baking and enable even heat distribution across the dough surface. The result is bases with a clearly defined crust, even browning and a degree of bake that is not achievable with non-perforated tins. Decora silicone mats are developed for specific applications: macaron mats with precisely punched circles in two diameters enable even macaron shells; the mats are food-safe, heat-resistant to 230 degrees Celsius and reusable.

Chocolate Moulds – Material, Detail Sharpness and Tempering Behaviour

The quality of a chocolate mould reveals itself not at purchase but at demoulding: a good mould releases the chocolate cleanly, without cracks, without marks, with the high gloss that correctly tempered couverture can develop. This result depends substantially on the mould material.

Decora offers chocolate moulds in two material classes. Polycarbonate moulds are the material of professional chocolaterie: the hard, transparent plastic material conducts heat evenly, allows a clear view of the crystallisation process through the mould wall and gives the chocolate a natural high gloss at demoulding – provided the couverture has been correctly tempered. Decora polycarbonate moulds are manufactured in food-safe quality and designed for intensive production use. Silicone moulds offer by contrast the advantage of flexibility: they are suited to fillings that must not break at demoulding and to shapes with undercuts that would not be demoulable in polycarbonate.

Piping Nozzles, Piping Bags and Decoration Tools

The choice of piping nozzle is a craft decision with direct consequences for the baking result. Round tips in various diameters for line work, fillings and macaron batter; star nozzles for rosettes and shells; leaf nozzles for decorative elements; rose nozzles for buttercream flowers – each opening geometry produces a different pressed image and requires a different technique.

Decora offers piping nozzles in stainless steel and plastic in a broad spectrum of profiles and diameters. Stainless steel nozzles are dimensionally stable, food-safe and developed for sustained professional use; they retain their opening geometry even after intensive use and dishwasher cleaning. Piping bags in various materials – reusable or disposable – complement the offering. Accessories such as nozzle adapters for quick nozzle changes, flower nails for free buttercream flowers and cake smoothers for even surfaces round off the decoration tool range.

Panettone Moulds, Packaging Materials and Sugar Decorations

Panettone moulds in paper or with paper lining are a specialist product with clear technical requirements: the dough of a classic panettone is extremely soft and rich in butter and egg yolk – it needs a mould that fully supports it during the long proving time and baking process while simultaneously regulating moisture. Decora offers panettone moulds in various weight classes and diameters, calibrated to the specific requirements of the dough.

Packaging material – cake boxes in various heights and sizes, window cartons, confectionery boxes, individual portion packaging – is understood by Decora as an integral part of the baking process, not as an afterthought. A well-chosen package protects the baked goods, communicates quality and completes the presentation. Sugar decorations from the Decora range include edible sprinkles, sugar figures, edible gold and silver elements and ready-made decorative elements for various occasions.
