Autumn baking is at its most fun when the fox, the hedgehog and the owl join you at the table. This category brings together more than 90 items featuring woodland animals, autumn leaves, mushrooms, nuts, apples and pears: cookie cutters for biscuits, silicone and chocolate moulds, sugar decorations and figures for the cake – from a biscuit afternoon with the children to walnut-shaped chocolates.

Cookie cutters for woodland animals and autumn leaves

The cookie cutters are the heart of the range. Deer, fox, hedgehog, owl, squirrel and stag come as plunger cutters: a plunger pushes the dough cleanly out of the cutter. Alongside these you will find classic cutters in various sizes: stag and fawn in small and large, the squirrel large or at 8 cm, the sitting fox, the Decora fox and the foxes Fiete and Fero. Owls offer the widest choice, from Petie, Alva, Frido and Hugo to the mummy and baby set.

Silicone moulds, chocolate moulds and tuiles

Apples, pears, nuts and mushrooms come out of silicone with every detail intact. The apple and pear silicone moulds have 15 cavities each, the half apple and half pear moulds 8. For nuts there is the walnut in two sizes, a large hazelnut, almonds and a peanut, plus chestnuts, a mushroom, a 16-mushroom mould and the forest mould. If you would rather bake a cake, choose the hedgehog tin or the autumn motif baking tin.

For chocolate there are moulds in walnut (18 chocolates), owl (21 chocolates) and pear (18 pieces), as well as the 3D apple and pear moulds with 28 chocolates each. Figures are cast in the squirrel, deer, owl and owl-on-a-log chocolate moulds. Wafer-thin decorative leaves are made with the tuile silicone moulds: maple leaf, oak leaf, éclair leaves, and apples and pears.

Decorations, cupcakes and cake toppers

For the finishing touch there are sugar mushrooms (mini 20 g, 80 g and large mushrooms 25 g), woodland animal and autumn mood sugar decorations, a marzipan autumn decoration, autumn wafer toppers and a chocolate decoration with 8 woodland animals. Tips from our kitchen

  • Chill the dough well. Leave shortcrust dough in the fridge for at least an hour, ideally overnight. Cold dough cuts cleanly and the animals keep their shape in the oven.
  • Use the plunger properly. Dip the cutter in flour, cut firmly, press the plunger and place the biscuit straight onto the baking tray.
  • Baking biscuits with children. Compact shapes such as the hedgehog, the owl or the apple are ideal for small hands. Roll the dough out between two sheets of baking paper so it does not stick to the rolling pin.
  • Keep tuiles wafer-thin. Spread the tuile mixture thinly into the silicone mould and scrape off any excess. Release the leaves while still warm.
  • Walnut chocolate mould. Polish the mould with cotton wool, line it with tempered couverture, fill it with nut ganache and seal with more couverture. Our walnut pralines with nut ganache show you every step.
  • Chestnut and mushroom moulds. Freeze moulds filled with mousse thoroughly. Once frozen, the pieces release from the silicone with every detail.

What is the advantage of a plunger cutter?

The plunger pushes the biscuit out of the cutter without you having to touch it, so fine parts such as ears, antlers or tails stay intact.

Which mould should I use for chocolate chestnuts, mushrooms or nuts?

For small filled chocolates, use a chocolate mould such as the walnut mould with 18 chocolates. For pieces made of mousse, marzipan or ganache, the chestnut, mushroom, large walnut or large hazelnut silicone moulds are the better choice.
