Which decoration for which bake?

On cupcakes, a wafer paper or wafer topper on the frosting plus a few sprinkles around the edge make the biggest impact. Dip cake pops in couverture chocolate or icing and press on two sugar eyes while the coating is still soft – and there is your monster. For cakes, go for the larger pieces: a chocolate graveyard, skeleton hands rising out of the glaze or a chocolate spider web. Use the fondant to shape mummy bandages, little pumpkins or monster ears.

Tips from our kitchen

  • Sugar eyes go on last. Only add the eyes after glazing. Still-wet icing, a dab of buttercream or a dot of melted couverture is all the glue you need. On fondant, a touch of water or edible glue does the job.
  • Keep sprinkles dry. Moisture makes colours bleed and sprinkles clump. Close the tub well after use and scatter them over moist creams just before serving.
  • Use edible blood sparingly. A few drops look more real than a puddle. Apply it to a well-chilled surface: on firm buttercream or ganache the drips run more slowly and stay where you want them. Always test the spray on a piece of baking paper first.
  • Transfer chocolate tattoos properly. Lay the sheet printed side up, spread a thin layer of tempered couverture over it and let it set slightly. Cut out shapes while the chocolate is still soft, then peel off the sheet once it has hardened: the design is now on the chocolate.
  • Wafer paper and wafer toppers should go on just before serving, as moisture from the frosting softens them. They hold well on a thin layer of buttercream.
