Organic Orange Zest, 5 g
As fresh as straight from the tree – without grating a single orange
If you bake regularly, you know the situation: the recipe calls for the zest of an orange, but there's no fresh fruit to hand – or only a small amount is needed and the rest of the orange sits unused in the kitchen. RUF Organic Orange Zest solves this problem elegantly: the sachet contains 97% gently freeze-dried orange peel from certified organic farming, refined with a little natural orange oil, and its aroma intensity corresponds exactly to the zest of a whole orange. The result is a fresh, fruity and warmly sweet orange aroma that distributes evenly when worked into the dough and leaves no synthetic aftertaste – completely natural, no frills, and in the best organic quality. The gentle freeze-drying process preserves the volatile aromatic compounds of the orange peel in full, since no heat is used. The result is an orange zest that smells fresher and more intense than conventionally dried products, and delivers a noticeably more vibrant orange aroma when worked into doughs, creams and fillings.
From tarts to marmalade – more versatile than you'd think
This orange zest can be used wherever fresh orange zest is called for – simply use it as you would grated orange peel: stir it dry into the flour mixture or fold it directly into the finished dough. In sponge batters for orange cake, Bundt cake and pound cake it provides that characteristic fruity-sweet orange note that makes the difference between a plain cake and a truly aromatic one. In shortcrust pastry, almond biscuits and fine Christmas baked goods it lends the dough a warm fruitiness without overpowering it, and in yeast dough for Zopf and Brioche it rounds off the aroma in a way you really only notice once you cut into it. In creams, mousses and fillings, the organic orange zest develops its aroma particularly intensely, as it releases its aromatic compounds even more fully in a moist environment. For a classic orange cream for tartlets and tartelettes, stir it directly into the warm egg yolk and sugar mixture before adding the butter and orange juice – this allows the aroma to penetrate deep into the cream and leaves a fresh, vibrant orange flavour that is clearly distinct from bottled Liquid aroma. For an orange curd for sponge roulades and layer cakes, simply add the orange zest to the pan together with the orange juice and cook gently until a silky-smooth, intensely aromatic curd forms. It can also be stirred effortlessly into light mascarpone or quark cream fillings, giving the filling a fresh orange note that livens up the flavour of the whole cake. In confectionery, organic orange zest is a tried-and-tested ingredient for orange Pralines and orange Ganache: worked into a dark chocolate Ganache, it gives the filling that classic orange-chocolate combination that has been prized in confectionery for generations – simply bring it to the boil together with the cream and pour over the couverture so the orange aroma distributes evenly through the Ganache. It can also be worked effortlessly into icings, sugar glaze and Fondant, and for jams, preserves and chutneys it is simply cooked along with everything else. It also has a place in savoury cooking: in marinades for duck and poultry, in wintery sauces or in mulled wine and spiced baked goods, it adds a warm, fruity accent that is identical to fresh zest.
One sachet, one orange – it's that simple
One 5 g sachet equals the zest of a whole orange and is perfectly sufficient for most recipes. If you only need part of it, reseal the sachet carefully after use – thanks to the resealable packaging, the remainder stays conveniently ready for next time. Since the orange zest is freeze-dried, it absorbs moisture from the air if left open – so always reseal the sachet tightly immediately after opening and store it in a dry place to preserve the aroma and prevent the zest from clumping. Store in a cool, dry, well-sealed place, away from strongly scented spices or foods, so the delicate orange aroma is preserved long-term.
Because fresh orange aroma doesn't need a fresh orange
Fresh orange notes are among the most popular aromas in the bakery – and with this organic orange zest they are available at any time, with no grating, no mess and no compromise on flavour. Made from 97% gently freeze-dried orange peel from certified organic farming and refined with natural orange oil, it delivers the full aroma of a whole orange in a single small sachet – natural, free from synthetic additives and with an intensity you wouldn't expect at first glance. Whether in a light sponge batter, a silky orange cream, the icing on a celebration cake or a home-cooked marmalade – one simple addition transforms any bake into an aromatic experience that tastes of warmth, fruitiness and real orange.
