Making chocolate breaks at the stag party

Does the bride love chocolate more than anything? Perfect! Snacking is allowed at this pre-wedding party. But what exactly is ‘broken chocolate’?

‘Broken chocolate’ refers to freshly made chocolate / couverture that is mixed with a wide variety of ingredients, such as nuts, freeze-dried fruit, spices or crunchy flakes, and is later broken or cut into pieces. The resulting broken edge (which gives it its name) offers a direct glimpse into the inner workings of the chocolate.

But what makes broken chocolate so famous is not just the ingredients or the chocolate combinations, but above all its extreme freshness. Have you ever tried chocolate this fresh? Because if you have, you’ll never want anything else again!

At this event, each person can make four of their own chocolate bar pieces. Choose your favourite chocolate from over 25 different recipes and combine it with the finest ingredients. Once mixed, the chocolate is poured into a mould and then chilled for about 5 minutes. Once cooled, you can cut the chocolate into 8 equal-sized bars. This means that by the end of the course, each person will have made a total of 32 individual chocolate bars.

Our course leader, an experienced chocolatier, will demonstrate step by step during the evening session how this kind of chocolate bar is made.

As each person makes four different types of chocolate pieces, the chocolate pieces they have made and broken up can be kept for themselves, shared amongst the group or swapped.

Each person makes around 1 kg of assorted chocolate pieces. The individual bars look particularly lovely when packed in a transparent ‘bag’ and stacked on top of one another in different varieties. It is up to each person to decide how many bars to stack on top of one another in the bag. A single bar weighs around 25–30 g! At the end of the chocolate bar-making course, the filled chocolate bags are tied with a pretty bow before being packed into a carrier bag to take home. All participants receive a recipe booklet containing the relevant chocolate bar recipes so they can make them at home with their loved ones. It’s also a brilliant idea for homemade Christmas presents.

This is what everyone makes at the stag party

Weight of a whole slab of chocolate = approx. 250 g × 4 = 1 kg per person. Weight of a single cut-to-size bar = approx. 25–30 g (total of 32 individual chocolate bars per person).

Perfect for selling at a stag party

As lots of individual small bars are made at the chocolate-breaking hen party, these can, of course, be individually wrapped – rather than stacked in a clear plastic bag – and sold to passers-by as the evening progresses. After all, who doesn’t love chocolate? Each person makes 32 individual small bars (25–30 g per bar). But the broken chocolate you make is also really easy to eat yourself ;-)
