Cake ring Ø 15 - 30 cm x 20 cm

The Cake ring that knows no limits

The Städter Cake ring is the companion that turns a good cake into a truly impressive one – neatly layered, evenly constructed, and with a precision that becomes instantly visible at the first cut. With a height of 20 cm, it offers so much room that even ambitious creations such as naked cakes with many visible layers, multi-tiered celebration cakes, or elaborate novelty cakes with thick cream fillings can be executed without a hitch – and reveal their full beauty the moment the ring is removed. The steplessly adjustable diameter of 15 to 30 cm makes it so versatile that it works just as well for a delicate little tart as for a large celebration cake. Made from stainless steel with a material thickness of 0.3 mm, it reliably holds its shape even with heavy fillings and long chilling times – resistant to fruit acids and dishwasher-safe.

Applications – from sponge to multi-tiered cake

The Städter Cake ring is a true all-rounder in the bakery and is suitable for a wide variety of applications. It can be used directly for baking sponge bases, serves as a stable frame when assembling and layering cream cakes and mousse cakes, and makes naked cakes – where the layers are meant to remain visible – particularly easy to achieve. Thanks to the stepless adjustability, it can be used for any cake size from 15 to 30 cm – from small cakes for special occasions to large celebration cakes for many guests. As it has no base, it is especially well suited to cakes that are to be assembled and presented on a separate Cake board.

Baking sponge – how to get the base just right

For baking, place the ring on as flat a Baking tray as possible lined with baking paper – ideally use a perforated tray so that the heat reaches the batter evenly and an evenly baked, airy sponge is achieved. For very liquid batters, additionally line the ring with baking paper to prevent any leaking. Fill the prepared sponge batter into the ring, being careful not to use too much batter, as the sponge will rise during baking. Since the Cake ring has no base, heat reaches the batter evenly from all sides – the result is a particularly airy and evenly baked sponge that develops no domes or cracks. After baking, allow the sponge to cool completely before releasing it from the ring. If you want to work with it the next day, simply cover it with a second tray to prevent it from losing moisture. Use a knife to carefully release the sponge from the ring and cut it into even slices – for particularly precise cuts, a Cake cutter or a Cake saw is recommended.

Assembling and layering a cake – here's how it's done

Before assembling the cake, line the ring with a Cake insert strip so that the cream does not stick to the stainless steel and the ring can be removed effortlessly and cleanly after chilling, without damaging the edge of the cake. For layering, a small cardboard base that is 1 to 2 cm smaller than the finished cake is recommended – this makes it easier to lift the cake later and place it on the final Cake board. Place a slightly larger Cake base beneath the small cardboard base so that the cake stands securely and can be transported safely.
Then place the first sponge slice or prepare a crunchy base and layer the desired filling on top. Even thick ingredients such as caramel, lemon curd, fruit Jellies, or fresh fruit with Cake glaze can be used without any problem, as the ring reliably prevents leaking. Build up layer by layer, carefully smoothing each layer until the desired height is reached. Place the finished cake with the ring in the fridge or freezer until it has set completely – then simply remove the ring thanks to the insert strip and place the cake on the final Cake board.

What to keep in mind when using it

To ensure the ring stands securely during baking and the batter does not seep underneath, it should always be placed on as flat a Baking tray as possible. If you want to bake several bases at the same time, you can easily place multiple rings side by side on the same tray, provided there is enough space. When assembling cakes, make sure that the fillings are no warmer than room temperature before being poured into the ring, so that the bases do not become soggy. The ring should never be worked with sharp objects, as this can damage the polished surface. After use, rinse the ring under warm water or clean it in the dishwasher – the stainless steel surface is dishwasher-safe and can be cleaned quickly and easily. Make sure to allow the ring to dry completely after cleaning before storing it, so that no water marks or limescale spots remain that could gradually make the shiny surface look dull. Store the dried ring upright or flat in a cupboard or drawer, protected from scratches and other objects that could damage the polished surface.

Clean, stable, straight – cake artistry in perfection

There are moments in the bakery that make everything worthwhile – and one of them is the instant when the Cake ring is lifted off and a perfectly layered, even cake is revealed, looking exactly as you had imagined it. The Städter Cake ring with a height of 20 cm and a steplessly adjustable diameter creates the conditions for exactly that moment – reliably, precisely, and so convincingly every time that baking cakes stops being a matter of chance and starts becoming an art.
